Who says dessert can’t be for breakfast? Well, I decided to turn this average breakfast into dessert waffles. These banana foster waffles will make you look like a gourmet chef, when in reality, a few minutes more you can have yourself an over the top breakfast made for two. I like to make my own waffles but feel free to use boxed pancake/waffle mix. It turns out great either way.
1 1/4 C flour, 1 TB baking powder, 1 TB sugar, 1/2 tsp. salt, 3 LG. eggs(beaten), 12 TB, divided butter(melted), 1 1/2 C half and half, 3/4 Maple Syrup 3/4 tsp. Cinnamon 1/4 C Rum (optional-I use rum to give it more of an authentic flavor, but tastes great without as well), 1 tsp. Vanilla Extract, 2 Bananas-peeled and cut diagonally 1/2″ thick and whipped cream.
Whisk together flour, baking powder, sugar and salt.
In another bowl, whisk together eggs, 6 TB butter, half and half and extract. Pour the wet mixture into the dry and blend. Let sit for approx. 10 minutes. (these get really fluffy this way)
Melt the remaining 6 TB of butter with maple syrup over med heat in a saucepan. Stir in cinnamon, rum and vanilla and simmer 1 minute. Add sliced bananas to the pan and simmer 2 more minutes. Set aside. Make waffles in your waffle iron. When completed, plate and use a slotted spoon to transfer the bananas to the waffles. Pour a little of the syrup mixture over waffles and the rest in a syrup jar. If you are anything like me, I like ALOT of syrup. Add whipped cream. Serves 2+
